Eggplant Parmigiana
Made fresh
-1 Eggplant
-1 cup of Flour
-3 Eggs
-Parmesan
-Mozzarella
-Oil to fry
-Lemon
Instructions
Peal your eggplant and Cut your eggplant either in circles or long wise as preference
Add it in a bowl with water, lemon and salt to avoid turning brown.
While eggplant is soaking crack eggs into a bowl and whisk
Add your parmesan and mix
Drain water from eggplant. Squeeze eggplant to avoid any excess water
Take a bowl and add flour. Take your eggplant, dip it in the flour and then egg mixture.
Add oil in your frying pan and fry eggplant Once you see a bit of brown on the edges flip it over dont constantly flip them.
Fry for about 4 mins 2 mins on each side. Once golden brown, remove and add on a plate with a paper towel.
Add your sauce(Use Nonnas famous sauce For best results ;]) at the bottom of the pan Add your eggplant slices then sprinkle some parmesan cheese and mozzarella. Then add sauce and repeat steps till no more eggplant.
Cook at 350.
Serve once ready.
