Layered Eggplant
MY FAVOURITE THING EVER!!!!
1 Eggplant
1 cup of seasoned flour
4tsp paprika
2 eggs
1/2 cup of heavy cream, champaignte/country cream.
1 tsp butter, flour and parsley
1 chopped shallot
half pack of mushrooms
1 pack of imitation crab
1/2 cup of graded gruyere cheese
pinch of salt and pepper
Instructions
Slice eggplant in 4 and slice those 4 horizontally in the middle not all the way
Pass in flour with paprika Beat egg and milk in a bowl Place in egg and milk mixture
Heat butter in frying pan and cook eggplant Keep pieces separate
For the inside: Melt butter in saucepan Add mushrooms, shallots, parsley and cook for 3-4 min
Mix 1 tsp flour stir till incorporated 1 min Stir in crab meat 2-3 mins Pour the cream 4-5 mins Add the cheese
to assemble:Take mixture and add a scoop in the middle of eggplants and then on top of it Rest of the cheese and sprinkle on top Put in oven to broil for 6-10 mins
